Due Vittorie was founded by Davide Maletti and Giorgio Regnani who chose to name the new company after their 2 daughters, Maria Vittoria Maletti and Maria Vittoria Regnani. Due Vittorie Balsamic Vinegar is produced using two main ingredients: concentrated grape must and wine-vinegar, both of which are obtained from the grapes of Lambrusco di Sorbara (PDO) that grow in the company’s own vineyards. What makes DueVittorie special and different from every other product on the market is a patented production process (double reduction) that allows for the making of a Naturally Dense and Perfectly Balanced Balsamic Vinegar with no addition of sugar, no addition of colorants, no addition of caramel, and no preservatives or sulfites. The Process: The first step is generating a concentrated grape must through a process of evaporation. The second step is slowly cooking of the concentrated must to achieve a perfect consistency and texture. This white balsamic vinegar produced by the Cattani family is manufactured with sweet must derived from select organically grown white grapes of the Trebbiano variety. The richly perfumed must is not cooked but rather reduced at a low temperature so as to preserve the delicate golden color. After the must has been reduced it is mixed with aged white vinegar and put into barrels for less than 6 months.
